Apple-Pear Salad With Lemon-Poppy Seed Dressing


·         1 (16-oz.) package romaine lettuce, thoroughly washed
·         1 (6-oz.) block Swiss cheese, shaved 
·         1 cup roasted, salted cashews 
·         1/2 cup sweetened dried cranberries
·         1 large apple, thinly sliced 
·         1 large pear, thinly sliced 

Preparation
1.     1. Toss together first 6 ingredients in a large bowl; serve with Lemon-Poppy Seed Dressing.

·       Lemon-Poppy Seed Dressing
Original recipe makes 4 servings
·         3 tablespoons apple cider vinegar
·         2 tablespoons fresh lemon juice
·         2 teaspoons Dijon mustard
·         2 teaspoons honey
·         1/2 teaspoon onion powder
·         1/4 teaspoon kosher salt
·         1/2 cup grapeseed oil or olive oil
·         2 tablespoons poppy seeds
Directions
  • Whisk together vinegar, lemon juice, mustard, honey, onion powder, and salt in a bowl. Slowly drizzle in grapeseed oil, whisking constantly, until combined. Stir the poppy seeds into the mixture.
