Corn Bread

Cornbread
½ cup butter (please replace half the butter/oil with unsweetened applesauce. Double the amount that you replace).
2/3 cup white sugar
2 eggs
1 cup buttermilk (simplify by replacing the cup of buttermilk with 7/8 cup milk and 2 tbsp vinegar and let sour for 5 min
½ tsp baking soda
1 cup cornmeal
1 cup all-purpose flour
½ tsp salt

Directions

Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Amazing Chili

CHILI RECIPE:

2 tablespoons vegetable oil, divided
1 1/2 pounds ground turkey
1 (1 ounce) package taco seasoning mix
1 teaspoon ground coriander
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes or cayenne pepper
2 tablespoons tomato paste
1 (14.5 ounce) can beef broth or 2 cups of water and 2 teaspoons/cubes beef bouillon
1 1/2 cups mild salsa
1 (14.5 ounce) can crushed or diced tomatoes
1 can black beans
gw1 can corn (keep or drain the liquid in the beans and corn as needed)
1 medium onion, chopped
1 green bell pepper, diced
3 medium zucchini, halved lengthwise and sliced

Directions: Heat 1 tbsp of oil in bottom of large pot; add meat, spices and tomato paste and cook until meat is well browned. Add broth, salsa, tomatoes, beans and corn; simmer for 10 minutes. Saute onion, pepper, and zucchini in other tbsp of oil; when onion and zucchini begin to turn translucent, add to meat mixture, and simmer another 15 minutes; add water if needed
